Ingredients:

  • 1 de-seeded jalapeno pepper
  • 1 white onion
  • 3 peppers
  • 2 ribs of celery
  • 3 cups of chicken broth (3 chicken stock cubes in 570mls boiling water)
  • 1 tin of chopped tomatoes
  • 1.5 cups of rice
  • 1 bay leaf
  • 2 tablespoons of cajan spice
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 175 grams of king prawns
  • salt and pepper

Instructions:

Stir it all together

Cover and simmer for 30 minutes

Stir occasionally to prevent rice from burning

Simmer and stir until prawns are cooked

Remove bayleaf and serve
