Notes:

Ingredients:

  • 3 chicken breasts cut into strips
  • 2 brown onions, quartered
  • 5 spring onions, chopped
  • 2 chillies, deseeded and finely chopped
  • 1 orange pepper
  • 100g mushrooms, sliced
  • 1 tsp onion salt
  • 3 tbsp tikka curry powder
  • 2 tbsp Schwartz piri piri seasoning
  • 2 chicken stock cubes
  • Water

Instructions:

Slice the chicken and place it in a wok.

Add onion salt, piri piri seasoning (dried chilli flakes can be used instead), and tikka powder.

Add the spring onions, onion, chillies, peppers and mushrooms.

Pour enough water to almost cover the chicken, but not quite. Bring to the boil, stirring occasionally.

Add the stock cubes, stir until dissolved, then reduce to simmer until thickened.

Serve with rice or chips.
