Ingredients:

  • 600g Extra lean Rump steak
  • One Cal Spray
  • 1 Medium Onion
  • 1 Yellow Pepper
  • tin of tomatoes
  • 300ml Beef stock
  • tin of kidney beans
  • 1 tbsp tomato puree
  • 1 clove garlic
  • 1 whole chille
  • pepper
  • coriander

Instructions:

Cook the meat in frylite until brown.
Remove the meat and keep warm
Fry the onion until soft then add the pepper and cook for a minute
Pour chopped tomatoes, stock, kidney beans, tomato puree, garlic, chilli and pepper into pan and bring to boil.
Reduce temperature and simmer for 5 mins
Return the cooked beef to pan along with coriander and boil for three mins and serve with cooked rice.
