Moussaka (Beef)

Ingredients:
400 grams of extra lean steak mince (less than 5% fat)
3 large aubergines
400 grams of passata
1 medium onion chopped
100 grams of mushrooms
2 garlic cloves crushed
1 tsp dried oregano
low calorie spray oil (WST recommend rapseed spray oil)
2 tbsp of tomato puree
Salt & pepper to season
2 pkts of colemans cheese sauce
1 pint of water
60 grams of half fat cheddar grated
pinch of nutmeg
Instructions:
Dry fry the mince until brown, add the garlic, oregano, chopped onion and mushrooms and saute off until soft
Add the passata and tomato puree and simmer for 20 mins
Slice the aubergine into 1cm slices and in a hot pan spray low calories spray oil and saute the aubergine 1 min each side and set aside
In another pan make up the cheese sauce with water add the nutmeg
In a oven proof dish layer mince mix then aubergine and repeat twice.
Pour over the cheese sauce mix and sprinkle the half fat cheese on top and cook in the oven for 20 mins
Remove from the oven and serve
