Ingredients:
- 1 de-seeded jalapeno pepper
- 1 white onion
- 3 peppers
- 2 ribs of celery
- 3 cups of chicken broth (3 chicken stock cubes in 570mls boiling water)
- 1 tin of chopped tomatoes
- 1.5 cups of rice
- 1 bay leaf
- 2 tablespoons of cajan spice
- 1/2 teaspoon cayenne pepper
- 1 teaspoon dried thyme
- 175 grams of king prawns
- salt and pepper
Instructions:
Stir it all together
Cover and simmer for 30 minutes
Stir occasionally to prevent rice from burning
Simmer and stir until prawns are cooked
Remove bayleaf and serve
