Ingredients:

  • 100g mushrooms, chopped
  • 2 large onions, chopped
  • 140ml passata
  • 100g courgettes, chopped
  • 100g aubergine, chopped
  • 1/2 red pepper, chopped
  • 1/2 yellow pepper, chopped
  • 100g whole baby sweetcorn, chopped
  • 2 cans of chopped tomatoes
  • 1/2 tbsp artificial sweetener
  • 12 dried lasagne sheets
  • 500g very low fat natural fromage frais
  • 28g reduced fat cheese, grated

Instructions:

Preheat oven to 190C.

Add FryLight to a saucepan, add the chopped mushrooms and one of the onions.

Cook for a few minutes.

Add the passata. Stir in the courgettes, aubergines, peppers and sweetcorn and simmer for 20 mins.

In another saucepan, place the other onion, tomatoes and sweetener.

Bring to the boil and simmer for 10 mins.

Pour 4-5 tbsp of the tomato mix into bottom of dish.

Add 3 of the lasagne sheets and then a layer of vegetables.

Continue layering this way.

Pour on the fromage frais on top.

Sprinkle the cheese and bake for 30-40 mins until the cheese is golden brown.
